I used to set mathematics a lot in my earlier days, and often would use the true minus sign from Symbol or another math font. It is perfect for use for a negative (go figure) and also has the advantage of being the same width as the plus sign (from the same font). When giving a range of numbers, always use the en dash, never the em dash. This is a fairly consistent style rule.
