How to log/monitor/delay/modify packet transmission in a Linux router ?

I have a Linux router , with a three Lan Adapter on it (eth0 , eth1 ,
eth2) , and they are correctly initialed.
eth0 is connected to internet.
eth1 and eth2 are connected to two hubs and using private IP (192.168)
. The local private network can connect to internet by IP Masquerade.

The above is my network structure.

I have a question:
1. I want to observe , gather statistics of the packet traffic in the
router , how to intercept the packet in the router . If I want to log
the packet traffic between the three LAN adapters , which library can I
use ?

2.I want to do some QoS work , beside gather statistics of packets ,
how to modify or delay the transmission of a packet ?

Which library should I use ? Where can I get the related information ?
