Traditional Indian Style Recipes: TANDOORI CHICKEN: serves 4-6 people Ingredients: 6 chicken joints 1 teaspoon of salt(optional) 3 tablespoons of lemon juice 1/2 inch or 1cm of root ginger, peeled and finely chopped 2 small garlic cloves, peeled and finely chopped 1 green chili pepper(optional if you do not extremely spicy foods) 2 tablespoons of finely chopped coriander leaves 95grams/ 3fl oz of thick natural yogurt 1 teaspoon of ground coriander 1 teaspoon of garam masala 1/2 teaspoon of ground cumin 1/4 teaspoon of ground pepper 1/2 teaspoon of tandoori color mixed with 1 tablespoon of tomato puree. The chicken should have all the skin removed, and then cut each piece into two. Make slits or fork holes in each piece. Pour lemon juice and rub salt onto each piece. Let it soak from 30 minutes to two hours, your choice. The longer it sits, the more it soaks in the flavor. Put the spices in a blender, along with the chili pepper, coriander leaves and yogurt, and blend until smooth. Add the remaining ingredients and blend again. Spread the sauce over the chicken. Let it marinate from one hour to 8 hours. Again, the longer it marinates, the tastier it will be. If baking, preheat oven to 240 Celsius/ 475 fahrenheit. Line a pan or roasting tin with aluminum foil. Place the chicken in the pan. Cooking time is approximately 30 minutes. Turn the pieces over when they brown. Instead of baking, you may also grill the chicken pieces on a barbecue, as I do on a regular basis in the summer. Once again, if you like these recipes, feel free to order the rest for only $10.00. If you decide to order, please indicate you e-mail. As well, I am putting together a list of recipes for South Asian Desserts and Drinks. The cost will be approximately $5-$10. Please indicate if you would like me to e-mail you once this list is ready. I hope you enjoy this Indian meal as much as I do. Thank You and enjoy, Jivan Manhas e-mail: rivan@terraport.net END -- Cut Here -- cut here
