It's more than just "defining" a new channel.  This is the one
case where sendmail does better than the SCO-provided MMDF.
For MMDF there has to be a binary channel program (like uucp
and smtp in ~mmdf/chans) which understands the protocol used
(in this case X.25/X.400).  There is an EAN channel available,
but you need a license to use the EAN software from UBC (which
SCO doesn't have), and then you need to build it.

Sendmail can handle this better, because all one needs is a
program that takes recipients on the command line and a message
on stdin.

You have to post-process the output of pathalias, since
pathalias output does parts of two MMDF jobs.  See if there is
any documentation for the command "uuprocess" on your system.
I don't how well it will work, but I can also dig around and
try to find the shell script I used to have that does the same
sort of work.
