All you need to do is pick up the audio from your soundcard and save it to disc. /usr/bin/sox -c 2 -r 44100 -t ossdsp -w -s /dev/dsp -t wav | \ /usr/bin/oggenc - -Q -o /path/to/file.ogg will save the output as an Ogg Vorbis file.
