I need a very very very easy to read, ie well written, but
technically accurate, book or piece of software (ideally the
latter) which explains the principles of CPU operation - -
Idelaly something which also puts the whole issue in the context
of Turing Machines and the history of computing.

Something better than PC TUTOR software.

I need it for teaching purposes.

Would recommend a book:
Computers&Information Systems-Tools for an Information Age
H.L.Capron and J.D. Perron.
Publisher: Benjamin/Cummings Publishing Co.,Inc.
           390 Bridge Parkway.
           Redwood City,Ca,94065,USA.
ISBN: 0-8953-1100-9
Mine is 3 rd Edition, 1993 so may be an update.
600+ pages with a large section on CPU and also on History.
Also has some pictures and seem to remember it was about 30 UKP-2 yrs
ago. Can't remember where I got it but my usual places are Waterstones
and Blackwells.Don't know of software-others may be able to help.
Regards,
Tony
