If you've got $100 plus drinks, tax & tip to drop on a dinner, check this place out. It's not really dinner in any conventional sense. It's a tasting menu to the max. It's all about flavors, combined and contrasted, with amazing innovation. In fact, one of the courses was so insubstantial it was called "watermelon air" served as a palate cleanser. It was a bit of watermelon juice that had somehow been foamed, and it dissolves into nothing your mouth leaving nothing but the flavor of fresh watermelon. Another dish was a piece of lobster tail skewered onto a scientific bulb syringe; you use it to pop the lubster into your mouth and squeeze the bulb to squirt the sauce in after it. We had 35 different two-bite courses over a 2-hour-plus seating. You are served by two chefs and an assistant, and watch as they prepare everything, a bit like being served at a sushi bar. A "host" makes sure you get your glass of wine properly timed, etc. It's a little hard to get reservations. They have two seatings of six people each per night, and you can't call more than a month in advance. It's pricey but for hard-core foodies it's a great experience. But the menu evolves slowly so I don't imagine going back anytime soon. -- Jeff Never put off until tomorrow what you can put off until the day after tomorrow.
