The concept of "performance cooking" has since caught on in Japan. That's interesting to know. We once had a birthday party at a place called Japon Steakhouse which is in the same spirit as Benihana's. Being a new and upscale place, the "manager" (he was probably the owner there) went around each table toward at the end of the meal to talk with his "clients". He told our group that the chefs he has staffed are among the best in the United States, and that they are trained in Japanese schools with 3 year (!) programs for these type of "performance" chefs. He went on about handing picking his chefs from Japan then bringing them back to the U.S. only to set them up with luxury condos and nicer than average cars. My point is that he made it sound like the origin of that "art" is Japan. That would not be the first thing the ambitious japanese assimilate, refine to perfection, and then represent as their own. Heh, a cabbie told me that rice could be substituted for hashbrowns on the breakfast menu at McDonald's on Hawaii.
