I know of no book which will do all you describe -- the topic is simply
too broad.

That said, there are a number of good books in the field. To learn the
IP protocols (heart and soul of UNIX networking) see Doug Comers books
on "Internetworking With TCP/IP". Volume 1 is what you should start with.

If you want to learn how the things fit together on a practical level
and care less about the fine details, get one of the newer system admin
books which covers the topic.  Nemeth/Seebass/Snyder have a good one;
and O'Reilly books has a new one out on administering a TCP network
-- I've not seen it yet, but most O'Reilly books are good.

If you're strictly a user, you might try Ed Krol's "The Whole Internet
Catalog" or Brendan Kehoe's "Zen and the Art of the Internet".

If you really want to cover all the topics you asked about in technical
detail, expect to spend a couple of hundred bucks.
