This would be better discussed in demon.ip.support.unix - follow-ups
set.

The first thing to bear in mind is that your incoming mail doesn't go
via post.d.c.u but to "punt-x.mail.demon.net" where x is currently
either 1 or 2. To make life more complicated these machines are
clusters so deliveries will actually come from things like "punt-11".

It won't: smtproutes controls outgoing mail only. I think your problem
is somewhat more fundamental - you need to ensure that there is an smtp
listener running which will accept incoming mail from Demon. I think
all this is covered in the INSTALL for qmail: you'll need to edit
inetd.conf and restart inetd so that qmail-smtpd gets started
appropriately. A connection to the local smtp port to prove that this
works is included in the tests within INSTALL.

If you really want to accept incoming connections only from Demon's
machines I think you'll need to use tcpwrappers or similar as this
doesn't seem to be a feature of qmail itself. Make sure that you've got
things configured to prevent relaying and it should be safe to accept
anything on port 25 though.

No, qmail-smtpd should start automatically once set up correctly. There
are better ways of dealing with the outgoing queue as well, but one
thing at a time...

Look at INSTALL again and confirm that all the tests work.
