As usual, I answer my own question AFTER posting it. It appears, at least one way, that you extract the files from Reader 8 by actually installing the program. Once done, there is a "setup files" directory with the usual suspects in there. Of course, as the first or second post states, there is no deployment wizard yet for 8. Or itw file to use with Install Shield 7 for Acrobat to use on 8. Why Adobe released a deployable version of the 8 reader without an ability to customize it, I don't know, unless they were responding to security issues with 7.X and had to rush it out. Would really like that wizard.
