Try using struts.  For example:

  \begin{enumerate}
    \item
       Newton's Law of Viscosity: $t = -u \frac{dv\strut}{dz\strut}$
    \item
       Fourier's Law of Conduction: $q = -k \frac{dT\strut}{dz\strut}$
  \end{enumerate}

or

  \begin{tabular}{ll}
     Newton's Law of Viscosity:   & $t = -u \frac{dv\strut}{dz\strut}$ \\
     Fourier's Law of Conduction: & $q = -k \frac{dT\strut}{dz\strut}$
  \end{tabular}

Hope this helps!
