Does anybody know of a good, small butcher (i.e., not in a
supermarket) in the Charlottesville/Albemarle area who sells green steaks?
If you don't already know what green steaks are, don't
bother to answer. Those who have lived in the high plains
country or in Ecotopia (the Pacific NW), where life is less
strictured (and structured) than here, will know what I'm talking about.
     Thanks.

And those of us who aren't from the Pacific NW, and who come
from a more strictured place will ever know what green steaks are. Pity
us.
	Thanks.

I like mine chicken-fried, but usually scrape the green off first.

I heard that red and blue steaks are much healthier, especially
when cooked in grease.

I'm immediately sorry for asking, but could you condescend to
explain to this strictured schmuck from the coastal plain
exacly what a green steak is? Maybe we could work out a deal,
like I'll explain what "scrapple" is or something.

When aging fine beef there is a turning point at which it becomes green
and is then added to the garden. It does not have to be composted-- it
bypassed that stage while still in your fridge. Green pizza can still be
fed to your roommate. Green roadkill is used to make scrapple.

does anyone know where in town you might manage to eat a green
steak? I don't know about cooking my onw slightly spoiled one,
I'd rather leave that to some chef's hands. I have manage dto
find quite a number of inetersting foods by just reading
uva.chat!
