Hello,

I was wondering if any of you have any good chicken fajita recipes you
can pass on. I'm interested in everything from the brand of meat you
buy, marinades, grilling technique, etc.

I know you will laugh, but I'm looking for the style of chicken fajitas
that Casa Ole' serves (yeah, I know!), but if you have a great recipe,
I'd be interested in that as well.

Been a vegetarian for the past 15 years, and I'm totally lost on the
poultry thing.

thanks in advance,
epf

I use Goya's Mojo Criollo (a citrus marinade available at most supermarkets
in Houston/Austin/San Antonio, in the Mexican food section) with soy sauce
added to it. Marinade a minimum of two hours.... the longer the better....
and grill off of the hottest coals, or on a "low" to "medium" on a gas grill
selection to get the center cooked without burning the outside.

Welcome back to the wonderful world of meat epf!

My wife started buying "organic" chicken from Whole Foods. I was
a little perturbed until I tasted it and also when she told me that it was
not more expensive than "inorganic" (hehehe) chicken at HEB. I had
never put much stock in an ill-defined term that I figured to make the
produce overpriced and possibly not as tasty. I am still not converted
to this organic stuff in general but I must say that this is the best
chicken
that my wife has ever cooked. I would expect it to make good fajitas.

By the way, citrus and soy sauce (among other ingredients) in marinades
(and BBQ sauces) make a good combination. I'll have to try the Goya
product and get my Mojo Criollo workin'.

While, as you note, "organic" is an ill defined term -- what else would
chicken be plastic? -- it dies represent practices which are
incompatible with the standard stuff them full and crank them out
factories. I'm surprised at the price equivalence though. The
factories are usually quite efficient. I'll have to take another look
although I rarely buy uncooked chicken.

She either lied to you or got it on sale. Organic chicken from Whole
Foods is most definitely more expensive than generic chicken from HEB.

Yes, I did not verify her figures and she is not that good
at "higher math." It sounds logical that she is mistaken and was
not looking at the price/lb as you get what you pay for and you
do pay for it at Whole Foods. I don't know what a similar pack
of legs at HEB is but in our freezer right now are Whole Food
legs/thighs at $1.89/lb. Maybe she was comparing boneless/skinless
white meat to these legs. It does not say "organic" as she calls it
but it says "Our Natural Poultry" and "no antibiotics, vegetarian
diet." Actually that is much better defined than labeling it "organic."
This is produce is worth it though.

Sorry, can't give out our fajita marinade recipe. If I did, I'd have to
kill you.

My husband gave it to me as a wedding gift and when I opened the envelope
during the reception, read the page and exclaimed "its the marinade recipe"
several people lurched across the table toward me trying to grab it out of
my hands. I had to stuff it down the front of my wedding dress to keep them
from getting it!

I guess that was a sign of his enduring love, eh?

Whole foods sells both Natural and Organic chicken. The organic, I
believe, eat an organic diet, not just vegetarian. They are both
excellent products, but I usually buy the organic when available.

I suppose that they only use organophosphates and don't provide them
with any mineral supplements.

Really the point that I was trying to make was that
I am not an organic foods activist or have any
agenda to push anything but just am vouching
for this chicken based on its taste.
